SPINACH RICE CASSEROLE 
1 (10 oz.) pkg. frozen chopped spinach
Rice for 6 servings, cooked
2 eggs
1 c. milk
1 c. shredded cheddar cheese
1 tsp. salt
1 tsp. minced onion
Dash of pepper

Cook spinach according to directions; drain. Cook rice. Mix all ingredients together. Put in 1 1/2 quart buttered dish. Bake, uncovered at 350 degrees for 25 to 30 minutes.
