FRIED RICE 
2-6 tbsp. peanut oil
1 med. onion, diced
1 med. bell pepper, diced
1 sm. carrot, diced
3 1/2 c. cold cooked rice
1/2 lb. green beans or asparagus
1/4 c. cooked chicken or pork, sliced
Soy sauce

Heat a wok or large heavy skillet over high heat for 30 seconds. Add 1 1/2 tablespoons oil and swirl to glaze the pan. Reduce heat and saute the onion about 1 minute. Add the bell pepper and carrot and cook 2 minutes. Add oil as needed to prevent sticking.

Add the rice, toss to blend and stir-fry until heated through, about 3 minutes. Add beans or asparagus, chicken or pork, and stir-fry 1 minute. Serve with soy sauce. Makes 4 servings.
