MINESTRONE SAUSAGE SOUP 
1 lb. Italian sausage (bulk)
1 tbsp. olive oil
1 lg. onion
10 c. water
1/4 c. parsley
1/4 tsp. pepper
2 tsp. salt
2 lg. potatoes, diced
2 lg. carrots, chopped
1 bunch spinach
1 sm. can tomato sauce
Sweet basil
1/2 c. elbow macaroni

Brown sausage in oil. After browning sausage, put all ingredients in crock pot and cook about 6 hours on low. Add 1/2 cup elbow macaroni. Cook until macaroni is tender. Serve with grated Parmesan cheese.
