MINESTRONE SOUP 
1 chopped onion
2 tbsp. oil
1/2 lb. cooked, chopped Italian sausage
8 c. beef stock or water
1 can kidney beans, drained and rinsed
1 can (4 oz.) mushrooms, chopped
1 tsp. oregano leaves
1 clove garlic
1 bay leaf
Croutons
1/4 tsp. pepper
2 tbsp. parsley flakes
1/2 tsp. salt
1 zucchini, chopped
2 c. chopped escarole spinach or Swiss chard
1 1/2 c. uncooked pasta or noodles
Grated Parmesan cheese

In a large skillet, saute onion until transparent. Add all ingredients except cheese and croutons. Cover, bring to a boil and simmer 10 minutes until vegetables and pasta are cooked. Serve with croutons and grated cheese.
