SPINACH SALAD 
1 pkg. fresh spinach
1 thinly sliced med. red onion
1 pkg. frozen peas
1 (2 or 3 oz.) can bacon bits
6 hard boiled eggs, sliced
Mayonnaise, enough to cover bowl
Muenster cheese (cheddar cheese is good too)
Salt
Pepper
Sugar

Thoroug hly wash and drain spinach, stem and vein. In a deep pan or bowl, layer ingredients in this order, spinach, red onion, frozen peas, that have been thawed, do not cook, bacon bits and eggs. Add salt, pepper and sugar after every layer. Go easy on sugar, approximately 1 teaspoon after last egg layer. Seal entire bowl with mayonnaise 1 or 2 cups. If needed more can be added later. Place cheese strips in a pinwheel on top. Let stand at least 8 hours or overnight. Toss before serving. Lettuce may be used instead of spinach.
