PINEAPPLE RINGS WITH SWEET
POTATOES
 
1 can sweet potatoes
1/2 c. pineapple juice (drained from rings)
1/2 c. brown sugar
1/4 c. melted butter
Rings of pineapple (one for each serving)
Large marshmallows (one for each serving)

Mash sweet potatoes with pineapple juice, add brown sugar and butter. Place pineapple rings on a baking sheet. Heap a large spoonful of the mixture on each pineapple ring. Bake 20 minutes at 375 degrees. Remove from the oven and place a marshmallow on each ring. Return to oven until marshmallows are melted and brown. Delicious served with ham.
