SWEET POTATO PUFFS ON PINEAPPLE
RINGS
 
5 med. sweet potatoes (about 2 1/2 lb.)
1/4 c. orange juice
1 tbsp. grated orange rind
1/2 c. brown sugar
1 tbsp. melted butter
3/4 tsp. salt
1/8 tsp. pepper
6 slices well drained pineapple

Cook sweet potatoes in jackets until tender. Peel and mash. Add orange juice and rind, beat until smooth. Add sugar, butter and seasonings. With a pastry tube pile sweet potatoes on slice of pineapple. Put a small lump of butter on each potato mound. Place under broiler and brown slowly. Serve hot. 10-12 servings.
