4 c. finely diced apples
2 c. sugar
1/2 c. vegetable oil
2 eggs, beaten
2 c. unsifted flour
2 tsp. cinnamon
2 tsp. baking soda
1/2 tsp. salt
2 tsp. vanilla
1 c. chopped nuts (optional)

Place apples in mixing bowl. Add sugar. Stir to mix and let stand 1/2 hour. Add oil and eggs (blend). Mix and sift other ingredients well and stir into mix. Add vanilla and nuts. Turn into well greased and floured pan. Bake at 350 degrees for at least 45-50 minutes.
