CLOUD 9 CLAM CAKES (BITE - SIZE) | |
Mix together: 2 c. flour 2 tsp. salt 2 tsp. baking powder In a bowl beat: 4 eggs 1/2 c. clam juice (from drained clams 1/2 c. milk 2 tbsp. vegetable oil (Crisco) Add: 2 cans baby clams (drained) 1 can minced clams (drained) Add the blended dry ingredients to the eggs, clam juice, milk and vegetable oil. Mix until smooth. Add the drained clams. Refrigerate until ready to use. Fry in about one inch of Crisco oil in a regular fry pan at 350 degrees. One teaspoon of batter equals one clam cake. They should be small and light. At patio entertaining, the fry pan can be placed with a bowl of the batter nearby and guests can enjoy making these as part of the party. Caution: Be sure to hot oil is not accessible to children or boisterous adults! Drain the cakes on paper toweling and serve with salt and vinegar on the side to satisfy all tastes. |
