BITE SIZED CHERRY CHEESECAKES 
1 (8 oz.) pkg. cream cheese, softened
1 egg
1 tsp. vanilla
1 can cherry pie filling
(Also need "petit for" or miniature muffin tins (1 or 2) and fluted papers)

Beat cream cheese, egg and vanilla until smooth. Pour into lined muffin tins, approximately 2/3 full. Bake at 325 degrees for 12 to 15 minutes. Cool. Center will sink. Then spoon a cherry on each cheesecake.

These are great with the vanilla wafer on the bottom. You can also put chocolate chips on top instead of the cherry pie filling. Great finger food snack.

Vanilla Wafers can't fit at the bottom of a mini muffin pan people. They work beautifully for regular size cupcake pans but I tried the minis once, and had to shave off a lot off the sides for it to fit, and then it took up half the cup.

If you use mini Vanilla Wafers they fit perfectly. I made these with 1/3 cup added sugar, mini-wafers on the bottom, and added a couple of white chocolate chips to the top of each before cooking. Topped them with a combination of 2 cherries -- one from pie filling and one from canned cherries -- to get a combination of sweet and tart. YUM! The hit of the tailgate. :)

I crushed my vanilla wafers up, mixed in some butter and made the crust with that. Added 1/4 sugar to the recipe. Taking them to the church Christmas party.
