I crushed my vanilla wafers up, mixed in some butter and made the crust with that. Added 1/4 sugar to the recipe. Taking them to the church Christmas party.

If you use mini Vanilla Wafers they fit perfectly. I made these with 1/3 cup added sugar, mini-wafers on the bottom, and added a couple of white chocolate chips to the top of each before cooking. Topped them with a combination of 2 cherries -- one from pie filling and one from canned cherries -- to get a combination of sweet and tart. YUM! The hit of the tailgate. :)

Vanilla Wafers can't fit at the bottom of a mini muffin pan people. They work beautifully for regular size cupcake pans but I tried the minis once, and had to shave off a lot off the sides for it to fit, and then it took up half the cup.

I am going to try this - with the cherry - but sprinkle on
some finely chopped pecans... am also thinking - some apple
pie filling - crunched up... then with pecans over that... YUM!!!

This is much better with 1/4 cup sugar in addition to the cream cheese,eggs, and vanilla.

These are great with the vanilla wafer on the bottom. You can also put chocolate chips on top instead of the cherry pie filling. Great finger food snack.

I would imagine this recipe would be good with a vanilla wafer placed on the bottom of the cup cake liner first.
