APPLE BUTTER GRILLED PORK
TENDERLOIN
 
pork tenderloin
fresh garlic cloves, sliced
ground Allspice seasoning (McCormick or Badia)
freshly ground pepper
prepared apple butter

Note: For the apple butter, try to get as pure as possible with no sugar added. Your local farm stand may have a good one.

Trim tenderloin. Poke in various areas with a sharp knife and insert garlic slices directly into the meat. Rub generously with All Spice then add freshly ground pepper, to taste.

Put onto grill and cook meat until meat thermometer reaches around 155°F. Brush with apple butter on all sides and let cook until meat reaches 165°F.

Slice into medallions to serve. The only fat is in the pork itself. There is no need to salt this either. Big surprises await when you bite into a nice roasted piece of garlic. Enjoy!
