LEILA'S PORK WITH APPLES &
ONIONS
 
4 boneless center-cut pork loin chops, about 1/2-inch thick, trimmed of all visible fat
1/2 tsp. salt
1/4 tsp. pepper
olive oil
3 apples, cut in 1/4-inch thick pieces
1 tsp. ground cinnamon
4 cloves garlic, minced
1 onion, chopped
2 cups broth
1 cup unsweetened apple sauce

In sauté pan, cook onions, garlic and apples in olive oil. Place in large baking pan. Cook pork in sauté pan, turning over pork after a few minutes. Place in pan.

Pour broth and apple sauce in sauté pan and boil. Remove from heat and pour mixture over pork in baking pan.

Cook at 350°F for 20 minutes.

We made this last night, and we liked it a lot, even my 10 year old niece, she only ate the meat but that is saying a lot.

Had to cook it longer since the meat was thicker, used a meat thermometer and stop cooking when internal temperature was 150°F.

This recipe is a good foundation to build other flavors. I also will use sweet potatoes with the apples they pair beautifully. A little fresh or ground ginger is nice. Even a bit of clove adds an interesting dimension.

Not sure where the cinnamon comes in. It's listed but not included in the instructions. I included it in the sauce and it came out well. Three small apples is enough, I used three large and it was a bit much. Also, maybe doesn't need so much liquid but that may also be partially because of the extra apple.

Flavors were good, substituted Tagine for the cinnamon and added it to the onions, garlic and apples during the saute. I also thought there was too much liquid. Will make again but definitely cut the broth in half.
