ZUCCHINI BREAD 
2 c. sugar
3 eggs
1 tbsp. vanilla
1 c. oil (or 1/2 c. oil and 1/2 c. natural applesauce)
2 c. peeled, raw grated zucchini
3/4 c. chopped nuts
1 tsp. cloves
1 tsp. cinnamon
1 tsp. allspice
1/4 tsp. baking powder
1 tsp. baking soda
1 tsp. salt (optional)
3 c. flour

Combine ingredients as listed. Fill loaf pans a little over half full. Bake 1 hour at 325 degrees. Makes 2 loaves.
