SPINACH SQUARES 
4 tbsp. butter
3 eggs
1 c. flour
1 c. milk
1 tsp. salt
1 tbsp. chopped onion
1 tsp. baking powder
1 lb. mild cheddar cheese, grated (I use 1/2 pound mild and 1/2 pound sharp)
2 pkgs. frozen chopped spinach (thawed and drained)

Preheat oven to 350 degrees. Put butter in baking dish 13x9x2 and melt in oven. Remove. In a large bowl beat eggs well, then add flour, milk, salt and baking powder. Mix well.

Add cheese, spinach, and onion if desired. Again mix well. Spoon into baking dish and level off. Sprinkle with seasoned salt if desired. (I don't.)

Bake in 350 degree oven for 35 minutes (usually 45 minutes for me). Remove and let cool 45 minutes, then cut in bite-size pieces. Freezes well. To serve, defrost and reheat at 325 degrees for 12 minutes. Makes 40-60 pieces.
