GOLDEN SPINACH SQUARES 
1/3 c. chopped onion
2 (10 oz.) pkgs. frozen chopped spinach
1/2 lb. Velveeta cheese spread, cubed
1 c. cooked rice
3 eggs, beaten
1/8 tsp. pepper

Add onion to spinach; cook spinach according to package directions. Drain well. Combine spinach and onion with process cheese spread, rice, eggs and pepper. Pour into well greased 10x6 inch baking pan. Bake at 350 degrees 25 minutes. Cut into squares.
