COCKTAIL SPINACH SQUARES 
2 eggs
3/4 c. flour
3/4 c. milk
1 tsp. baking powder

1 pkg. frozen chopped spinach (thawed and dried
Minced shallot or scallions

in 2 tablespoons of melted butter over medium heat for several minutes, coating spinach and onions by tossing with a fork. Add salt and pepper and nutmeg to taste. Add the spinach to blended flour mixture along with 1/4 cup grated Parmesan and Swiss cheese. May substitute Romano if you like.

Bake in a 350 degree oven 20 minutes on a small cookie sheet or in a cake pan. Mix should be 1/2 to 1 inch thick. Spread evenly. Cool and cut in squares. Refrigerate.
