4 tbsp. butter
3 eggs
1 c. flour
1 c. milk
1 tsp. salt
1 tsp. baking powder
1 lb. Monterey Jack cheese, grated
2 pkgs. chopped frozen spinach, thawed

In 9x13 pan melt butter in 350 degree oven. In bowl beat eggs, add flour, milk, salt and baking flour. Mix well. Add grated cheese and thawed spinach (that has been well drained). Pour into 9x13 pan with butter and bake for 35 minutes at 350 degrees. Cool 15 minutes. Cut into bite size squares and serve.

To do ahead can bake, cool, cut into squares and place on cookie sheet and freeze. Then transfer to storage bag. Reheat 12 minutes at 325 degrees and serve.
