CHICKEN MOLD 
1 env. unflavored gelatin
1/2 c. cold water
1 c. mayonnaise
1 1/2 c. cooked, diced chicken
1/2 c. diced sweet pickles
1/3 - 1/2 c. diced celery
2 tbsp. minced onion
3 tbsp. chopped stuffed green olives
1 tbsp. diced pimiento
2 tbsp. lemon juice
1/2 tsp. salt
1/4 tsp. paprika
1 c. heavy cream, whipped
1/2 diced apple

Soften gelatin in cold water. Dissolve over hot water; stir into mayonnaise. Add remaining ingredients, except cream and stir well. Fold in whipped cream. Pour into individual molds or one large mold. Chill until firm. Unmold on leaf lettuce and garnish with ripe olive slices and bits of pimiento. Makes 8 servings.
