SPINACH BEAN PASTA 
8 oz. pasta, linguine works well; cook and drain
1 tbsp. olive oil
1 sm. onion, chopped
2 cloves garlic, minced
1/4 tsp. red pepper flakes
10 oz. frozen spinach, cooked and squeezed dry
15 oz. can kidney beans, drained
1/4 c. Parmesan cheese, fresh grated is best

Saute onions and garlic in oil. Add the pepper, spinach, and beans. Stir frequently and heat thoroughly. Add cheese just before serving. Omit the cheese to lower the fat content even more.
