CHOCOLATE ZUCCHINI CAKE | |
1 c. brown sugar 1/2 c. white sugar 1/2 c. butter 1/2 c. oil 3 eggs 1 tsp. vanilla 1/2 c. buttermilk 1/2 to 1 c. chocolate chips, for top of cake 2 1/2 c. flour 1/2 tsp. cinnamon 1/2 tsp. salt 2 tsp. baking soda 4 tbsp. dark, unsweetened cocoa 3 c. shredded zucchini If you don't have buttermilk, add 1 tablespoon lemon juice to 1 cup milk. Let stand 5 minutes, then measure what you need. Cream together brown and white sugar, butter and oil in large bowl. Add eggs, vanilla and buttermilk and stir to mix well. Measure all dry ingredients and zucchini into bowl. Stir until everything is blended. Pour batter into greased and floured 13 x 9 x 2 inch pan or 2 loaf pans. Sprinkle chocolate chips on top of batter. Bake in 325 degree oven for 45 minutes or until done. Cool in pan for few minutes, then turn out on wire rack and cool completely. Doesn't need frosting. |
