SUMMER SQUASH CASSEROLE 
2 c. cooked summer squash
1/2 c. mayonnaise
1/2 c. chopped onion
1 egg, beaten
1 tsp. sugar
1 c. grated cheese
1/2 stick butter
Salt, pepper, bread crumbs

Cook and drain squash. When soft, drain the squash and mash it. Add mayonnaise, onion, egg, sugar and salt; pepper to taste. Put in greased small casserole and sprinkle with cheese then bread crumbs. Dot with butter. Bake uncovered 30 minutes at 350 degrees. Makes 4 to 5 servings.
