EGG PANCAKES 
6 eggs
1/2 c. bread crumbs, Progesso is good
2 tbsp. olive oil
Season to taste, salt, pepper, oregano etc.
1 can tomato sauce, medium or if you have your own made that is better

Beat eggs. Add bread crumbs a little at time. You do not want eggs too hard or too soft. Add salt and pepper if needed. Heat fry pan, add oil. Put about 1 tablespoon egg mixture for each pancake. Cook until brown on one side, turn over easy and brown other side. Then add tomato sauce, cover and let steam until tomato is absorbed by eggs. There should be only a little sauce left in pan. Serve either cold or hot. Makes a good sandwich.
