JENNY'S LOADED NACHOS | |
1 lb. ground beef 1 (15 oz.) can black beans, drained 1 large tomato 1 chile (red or green) pinch of basil pinch of oregano salt and pepper, to taste 1 head of lettuce 1 bag flour tortilla chips (your favorite) 1 (15 oz.) can refried beans 1 (16 oz.) bag shredded cheese (I use Mexican Fiesta blend) Lightly brown ground beef in a skillet. Drain. Slowly add the can of black beans, mixing well. Preheat oven to 300°F. Chop tomato and lightly chop chilies. In a bowl, mix chopped tomato, chilies, basil, oregano, salt, pepper and lettuce. Set aside. On a cookie sheet, neatly arrange flour tortilla chips. Lightly drizzle refried beans atop of the chips until evenly coated. Tip: The easiest way to do this is to take a sandwich or freezer bag and snip a small piece off the corner. Place refried beans inside the bag and lightly squeeze on top of the chips until evenly coated. Layer the ground beef on top of the refried beans. Layer ground beef and bean mixture on top of the refried beans. Place into the oven and bake at 300°F for about 15 minutes or until cheese is completely melted. Once the cheese is melted, take the pan out of the oven, and proceed to evenly cover the chips with the mixture from the bowl. Place into the oven for another 5 minutes to warm. When the chips are done, scoop them off of the cookie sheet with a spatula, placing them onto a large serving plate. Enjoy! Submitted by: Jenny W. |
