QUICK COFFEE CAKE 
3 c. flour
2/3 c. sugar
3 tsp. baking powder
1/2 tsp. salt
1/2 c. fat (melted)
2 eggs
1 c. milk (lowfat or skim)

TOPPING:

1/2 c. sugar
4 tsp. cinnamon

Sift dry ingredients 3 times. Add rest of ingredients. Mix only until moist. Pour into 8 inch square pan. Combine sugar and cinnamon. Sprinkle over top. Bake 20 to 25 minutes at 375 degrees. Serve warm with butter. Nuts, raisins or coconut may be added to topping.
