RICE WITH MUSHROOMS AND CHEESE
CASSEROLE
 
3/4 fresh mushrooms, cubed
1/2 finely chopped onion
3 tbsp. butter
Salt and pepper to taste
1 c. converted rice
1 bay leaf
1 1/2 c. chicken broth, fresh or canned
2 tbsp. Parmesan cheese

Heat 2 tablespoons butter, add onion stir briefly, add mushrooms, salt, and pepper.

Add rice, stir, add bay leaf and chicken broth. Bring to simmer. Cover and cook according to directions on rice box. Swirl in 1 tablespoon butter and cheese. Remove bay leaf. Serve.

Used 8 oz mini bella mushrooms (1-1 1/2" across) quartered and increased broth to 2 cups. With a salad could be a meatless main dish or a "hearty" side dish.
