CRAZY BANANA/ZUCCHINI BREAD 
3 very ripe bananas
2 c. brown sugar, packed
3 1/2 c. flour
2 tsp. baking soda
1/2 tsp. baking powder
1 tsp. salt
3 eggs
1 c. oil
2 tsp. vanilla
1 (15 oz.) can cream of coconut
2 c. shredded zucchini
2 c. chopped walnuts

Mash bananas with brown sugar in bowl or process in food processor until blended. Combine flour, baking soda, baking powder and salt in another bowl.

Beat eggs well. Beat in oil, vanilla, cream of coconut and banana mixture until thoroughly blended. Slowly stir in flour mixture. Fold in zucchini and nuts. Turn into lightly greased 9 x 5 inch loaf pans. Bake at 350 degrees for 60 to 65 minutes. Cool slightly then turn onto racks. Makes 2 loaves.

NOTE: Cream of coconut is available in liquor section of grocery stores.

This bread turned out nice and raised high but the taste wasnt that flavorful as I expected. I might try again but add white sugar instead of brown.

I loved this recipe. I doubled the recipe and put in 2 cups packed brown sugar and 2 cups white sugar. I didn't have Cream of Coconut so instead I used 1 cup of Greek vanilla yogurt and 1/2 a can of coconut milk with the cream on top taking up most of it. Then discarded the rest of the liquid. I used slightly less oil - (about 2/3 cup for a double batch.) Couldn't taste the coconut. Next time I will add coconut flakes for more texture. It came out moist and yummy.
