GRANDMA NANCY ROBERTS' ZUCCHINI
BREAD
 
Beat together:

3 eggs
2 cups sugar
1 cup oil
2 cups shredded zucchini
3 teaspoons vanilla
1 cup walnuts (optional)

Sift together:

2 cups flour
1/4 teaspoon baking powder
2 teaspoon baking soda
1 teaspoon salt
3 teaspoons cinnamon

Preheat oven to 350°F.

Beat all wet ingredients together. Sift All dry Ingredients together. Combine the two mixtures and mix generously.

Bake for 45 minutes or until done.

Yield: 2 loaves
