GRANDMA WILKINS' PUMPKIN BREAD | |
2 1/2 cups all-purpose flour 2 tsp. baking soda 1/2 tsp. salt 1 tsp cinnamon 1 tsp. nutmeg 4 eggs 1 cup vegetable oil 2/3 cup water 3 cups sugar 2 cups pumpkin (may use 100% canned pumpkin) 1/2 cup chopped nuts 1 cup chopped dates or raisins (optional) Sift together flour, baking soda, salt and spices. Set aside. Beat eggs well, add oil and water, beat in sugar. Add flour mixture and pumpkin slowly, then add nuts and dates or raisins (if using). Bake in greased and floured pans at 375°F until done (about 30 to 40 minutes). Makes 2 loaves or 1 Bundt cake. Submitted by: Lisa Wilkins-Koehn |
