DRIED FRUIT BARS | |
1 c. whole wheat flour 1/2 tsp. baking powder 1/2 c. butter, at room temperature 1 c. packed light brown sugar 1 lg. egg 1 c. (4 oz.) dried apricots, cut in 1/4 inch pieces 3/4 c. (4 oz.) pitted prunes, cut in 1/4 inch pieces 1 c. raisins 1/4 c. finely chopped walnuts Heat oven to 350 degrees. Lightly grease a 13 x 9 inch baking pan. Line with foil; grease again. Mix flour and baking powder. Beat butter and sugar in a large bowl with electric mixer until fluffy. Beat in egg. Stir in flour mixture until blended. Stir in apricots, prunes, raisins and walnuts. Spread evenly in prepared pan. Bake 25 minutes or until top is lightly browned and edges pull away from sides of pan. Cool in pan on rack. Cut into 24 bars. |
