CAULIFLOWER WITH CHEESE 
1 lg. head cauliflower
2 tbsp. butter
2 tbsp. flour
1/2 tsp. salt
1/8 tsp. pepper
1 c. sweet milk
1 c. sharp cheese
1 tsp. Worcestershire sauce

Remove leaves and stalk from cauliflower. Add salt to 1 quart of water and soak 1/2 hour. Drain. Cook covered in 1 inch of boiling salted water 20 minutes or until tender; drain.

Melt butter, then blend in flour, salt and pepper gradually. Add milk. Cook, stirring constantly until it has thickened. Add remaining ingredients. Cook over low heat until cheese is melted. Pour over hot cauliflower. Serves 6, 154 calories per serving.
