CAULIFLOWER WITH CHILIES AND
CHEESE
 
1 med. head cauliflower
4 tbsp. butter
1 (4 oz.) can chopped green chilies, drained
1 1/2 c. Cheddar cheese, grated
1 c. sour cream
1 tbsp. salt
1/4 tsp. pepper
3/4 c. dry bread crumbs
1/2 c. green onions including tops, minced

Makes 6 servings. Preheat oven to 350 degrees.

Core cauliflower and break into flowerettes. Steam for 4 or 5 minutes until tender crisp. Drain well and combine with 2 tablespoons butter. Stir in chilies, onion, cheese, sour cream, salt and pepper. Spoon mixture into shallow 2 quart baking dish. Sprinkle with bread crumbs and dot with remaining butter. Bake for 25 to 30 minutes until top is lightly browned.
