OVEN BAKED POTATO WEDGES 
Vegetable cooking spray
6 tbsp. butter (3/4 stick)
4 lg. potatoes, unpeeled
1 lg. onion, minced
1 tsp. pepper, salt

Spray large roasting pan (17 1/4 x 11 1/2 inches) with vegetable spray. Melt butter in pan. Cut potatoes lengthwise into 8 wedges. Add potatoes and onion, salt and pepper to pan. Toss to coat. Bake 30 minutes, turning in 15 minutes at 425 degrees.
