OVEN BAKED POTATO WEDGES 
Vegetable cooking spray
6 tbsp. butter, butter or bacon grease (omit cooking spray if using bacon
grease)
4 lg. potatoes, peeled
1 med. onion, mince or diced
Salt and pepper to taste
Lemon pepper
Italian seasoning

Preheat oven to 425 degrees. Spray large open roasting pan (11 1/2 x 17 1/4 inches) with cooking spray; add butter. Place pan in oven to melt butter. Remove pan from oven.

Cut peeled potatoes lengthwise into 8 wedges. Add potatoes to melted butter in roasting pan. Sprinkle with minced onions, lemon pepper, Italian seasoning and salt; gently toss to coat. Bake 30 to 45 minutes or until potatoes are tender and browned, turning occasionally.

NOTE: Place on dish - can be topped with hot nacho cheese soup or sour cream with green chilies.

Making these tonight. Very excited! So easy and smells great. I did however add some parmesan cheese to the mixture. We'll see how they turn out. Thanks for the recipe!
