CHEESE AND MINT BAKEYS | |
These are great if you are having a party. Everyone takes them off the tray and always asks if they are any more. 2 large baking potatoes 1 (8 oz.) block strong cheddar cheese, grated (Cracker Barrel) 6 tsp. mint sauce (not mint jelly) large knob of butter salt, to taste freshly ground black pepper, to taste Preheat oven to 350°F. Bake potatoes at 350°F until cooked. Cut in half and scoop out potatoes leaving the skins whole and set to one side. Mash the potatoes, butter and mint, mixing well. Grate the cheese into the mix leaving about quarter of the cheese to one side for later. Spoon the ingredients back into the potato skins equally, then sprinkle reserved cheese over the tops. Bake at 350°F for about twenty minutes. All done! Note: For tasty bite-sized appetizers, cut each baked potato half into quarters. Submitted by: Michael Swaby |
