CANTALOUPE BREAD 
5 eggs
1 c. oil
1 tbsp. lemon juice
3 c. plain flour
1 1/2 c. sugar
2 tbsp. cinnamon
2 tsp. baking powder
1 1/2 tsp. baking soda
1 tsp. salt
2 1/2 c. grated cantaloupe

Beat eggs, oil, lemon juice until foamy. Add sugar, cinnamon, baking powder, baking soda, and flour. Mix well. In food processor, grate melon then fold into batter. Pour into 2 greased loaf pans or a bundt pan; bake at 350 degrees for 50 minutes. Delicious served toasted, buttered and spread with cantaloupe preserves or cream cheese to make a tasty snack.

NOTE: If cantaloupe is watery, drain some of the juice before folding into batter.
