CANTALOUPE COBBLER 
2 lg. cantaloupes
1 1/2 c. sugar
Enough pie dough for 2 single crusts
1/2 c. sugar
2 tsp. cinnamon
2 tsp. butter

Peel, seed and slice cantaloupe into about 12 slices, then slice each of these into thin slices cross ways, then add 1 1/2 cup sugar and mix. Let stand for about 2 hours. Make your pie dough, roll out on floured board and cut into 1 inch strips. Now grease a 9 x 12 x 2 inch pan with butter. Spoon half of the drained cantaloupe into pan, dab half of the butter over cantaloupes. Now lay half of the strips of dough over the cantaloupes and sprinkle half of the sugar and half of the cinnamon over the strips. Repeat again. Now place in preheated 350 degree oven and cook about 3 hours, adding some of the juice from the cantaloupe over all the pie about every 20 minutes after the first hour. Try to add all the juice and do not cook down dry.

my boyfriend remembered haveing this dish several years ago and really liked it. sounded gross to me, but decided to make anyway. BOY!! Was I ever wrong.....this cobbler is like a little slice of heaven. 2 changes that I have made. Soak cantaloupe in sugar over night and add 8 oz. of some kind of tropical juice to your cantaloupe juice/sugar mixture. I used the juice off of 2 cans of mixed fruit one time and a mixture of papaya/pineapple juice once. I think straight pineapple would be awesome, too. You will see what I mean. ENJOY!!
