CANTALOUPE COBBLER | |
2 lg. cantaloupes 1 1/2 c. sugar Enough pie dough for 2 single crusts 1/2 c. sugar 2 tsp. cinnamon 2 tsp. butter Peel, seed and slice cantaloupe into about 12 slices, then slice each of these into thin slices cross ways, then add 1 1/2 cup sugar and mix. Let stand for about 2 hours. Make your pie dough, roll out on floured board and cut into 1 inch strips. Now grease a 9 x 12 x 2 inch pan with butter. Spoon half of the drained cantaloupe into pan, dab half of the butter over cantaloupes. Now lay half of the strips of dough over the cantaloupes and sprinkle half of the sugar and half of the cinnamon over the strips. Repeat again. Now place in preheated 350 degree oven and cook about 3 hours, adding some of the juice from the cantaloupe over all the pie about every 20 minutes after the first hour. Try to add all the juice and do not cook down dry. |
