CANTALOUPE CAKE | |
3/4 c. oil 1 3/4 c. sugar 3 eggs 2 c. self-rising flour 1 tsp. cinnamon 1 tsp. baking soda 1 c. fresh cantaloupe 1 c. fresh apples, diced 1 c. raisins Combine oil, sugar and eggs. Beat until smooth. Add flour, cinnamon and soda. Mix well. Fold in cantaloupe, apple, raisins. Spread mixture into greased 9 x 13 inch pan. Bake at 375 degrees for 20 minutes. Lower temperature to 325 degrees and bake 10 minutes. Cool and frost. CANTALOUPE CAKE ICING: 1 c. powdered sugar 1/2 c. cantaloupe 2 tbsp. butter Mix all ingredients and spread on cantaloupe cake. |
