GRANDMA'S PEAR HONEY | |
8 cups finely chopped pears 3 tbsp. lemon juice and whole peel of 1/2 lemon 5 cups sugar 1/4 tsp. salt 1 tsp. ground ginger Wash, drain, core, chop or grind and measure pears. Do not chop lemon peel. Mix all ingredients and boil until a bit thicker than honey. When cold, pear honey should be pourable but not juice. Discard lemon peel and pour hot honey to within 1/8 inch of top of pint or half-pint fruit jar. Put dome lid on jar; screw band tight. Submitted by: Stephanie Fitch |
