PEAR HONEY 
9 c. pears
1 c. crushed pineapple, drained
Grated rind & juice of 1 lemon
5 c. granulated sugar

Wash, pare and core pears; run through food chopper. Combine pineapple with pears; add lemon rind and juice. Add sugar and cook over low heat, stirring frequently. Cook until clear. Just before done, add pectin, if necessary. Pack into sterilized jars.
