IRISH CHOWDER 
3 slices bacon
1/3 c. celery, diced
4 c. milk
1 1/2 tsp. salt
1/3 c. onion, diced
3 med. potatoes

Cut bacon into 1/2 inch pieces, fry until crisp. Remove bacon, pour off part of fat; add onion and celery; cook until straw-colored. Add 2 cups milk, bring to a boil; add potatoes that have been cubed. Simmer until vegetables are tender. Mash potatoes, add salt and remaining milk; bring to boiling point.
