DUCK GUMBO 
4 ducks
1 pt. oysters
5 lbs. shrimp
1/2 lb. smoked sausage
2 cans crab meat
2 cans chicken broth (do not use duck broth)
1 stalk celery, chopped
2 bunches green onions, chopped
2 c. green bell peppers, chopped
3 pods garlic
1 lg. can tomato sauce
1 lg. can tomato paste
2 pkg. okra
1 tbsp. thyme
Hot pepper
3 bay leaves

Make a roux with 1/2 cup oil and 1 cup flour, adding 1/2 teaspoon parsley flakes and 1/2 teaspoon paprika to make dark brown; add 2 chopped onions and brown. Add 1 stalk chopped celery, 2 bunches green onions, 2 cups green bell peppers, 3 pods garlic, and water. Add 2 large cans chicken broth, 1 large tomato paste and 1 large tomato sauce. Add 1 tablespoon thyme and 3 bay leaves and cook for 1 hour. Add 1 large can tomatoes. Add duck and shrimp and cook 1 more hour. Add 3 dashes tabasco. Add okra (2 packages), 1 dash hot pepper and cook 1 hour. Add 2 cans of crab meat and file, and serve hot over rice.
