GRECIAN BAKED FISH 
2 lb. fish (red snapper or any thick white fish)
5 or 6 onions, sliced
4 or 5 potatoes, sliced circular
1 can crushed stewed tomatoes, including juice
1/4 c. olive oil
4 bay leaves
4 garlic cloves, sliced thin
1 1/4 tsp. salt
1/4 tsp. black pepper
1 tbsp. paprika
4 tbsp. wine vinegar
2 tbsp. tomato paste, diluted with 1/2 glass water
Lemon slices for garnish on fish

Wash fish and season with a little salt, pepper and dash of paprika; set aside.

In a 10"x15" glass pan, combine sliced onions, potatoes, crushed stewed tomatoes, bay leaves, garlic, salt, black pepper and paprika. Add diluted tomato paste. Now arrange fish in center of pan and pour olive oil all over including fish.

Bake in 350 degree oven, covered with foil for first 40 minutes and uncovered for an additional 45 minutes. Add wine vinegar over potatoes and onions on last 15 minutes of cooking and lemon slices on fish. Serves 4 to 6.
