RED CAT FISH STEW 
5 slices fat back (fried)
2 or 3 lbs. catfish
2 med. onions, sliced
1 can Campbell's tomato soup
1 can Campbell's cream of potato soup
1 can cream of mushroom soup
1 tsp. sugar
1/2 tsp. Worcestershire sauce
Salt to taste
Pepper to taste
Hot sauce to taste

Use butter or pork grease to fry onions. (Do not brown onions too much.) Add above ingredients to onions, bring to boil. If red enough, add water to desired thickness of juice. Add catfish, cook slow, stir a little if it begins to stick.
