GREEN TOMATO MINCEMEAT | |
1 peck green tomatoes, chopped fine 5 lbs. brown sugar 2 lbs. raisins 2 tbsp. cinnamon 2 tbsp. salt 1 tbsp. cloves 2 tsp. allspice 1 c. chopped suet or 1/2 c. butter 1 c. vinegar After tomatoes are chopped, drain off juice and add just as much water back to them as was drained off. Bring to a boil. Drain again. Add sugar, raisins, cinnamon, salt, cloves, allspice, suet or butter and vinegar. Boil slowly 2 hours. makes 4 or 5 quarts. Some like to add a little orange rind. When the pie is to be made, extend the mince meat with fresh apples. |
