SARA'S COUNTRY CHICKEN 
3 lbs. chicken parts
1/4 c. flour
1/4 c. olive oil
1 c. diced onion
1 clove garlic, crushed
1/2 lb. mushrooms, sliced
1 1/2 c. white cooking wine
1/2 c. pitted black olives
1/3 c. capers
1 can plum tomatoes, drained & chopped
1 tsp. lemon juice
1/8 tsp. each pepper, basil, oregano, ground sage

Coat chicken parts with flour. Brown in olive oil. Remove chicken. Saute onions and garlic until golden. Add mushrooms. Cook 2 minutes. Add wine. Cook 10 minutes. Add remaining ingredients, including chicken. Cover and simmer 30 minutes.
