ORANGE RICE PILAF | |
1/4 c butter 1/2 c. chopped celery 1/4 c. chopped green onion 1 c. long grain rice 1 c. orange juice 1 tsp. salt 1 1/4 c. water 1 orange, sectioned and diced 1/4 c. toasted, slivered almonds 1/2 c. golden raisins In a large saucepan, melt butter and saute celery and onion until tender. Add rice, juice, salt and water. Heat to boiling and simmer, covered, about 20 minutes until liquid is absorbed and rice is tender. Fold in oranges, almonds and raisins. About 6 servings. |
