ORANGE RICE PILAF 
2 c. chopped onions
1 c. chopped celery
1/4 lb. fresh mushrooms, sliced
1 stick butter
2 c. orange juice
Grated rind of 2 oranges
2 1/2 c. water
1 1/4 c. raw rice

Saute onions, celery in butter 5 minutes. Add mushrooms, saute additional 5 minutes.

Add orange juice and water with orange juice. Bring to boil. Add raw rice. Salt and pepper to taste.

Simmer slowly until rice is tender, water is absorbed. Great with fish or poultry.
