LACY OATMEAL WAFERS 
2 eggs
1 cup sugar
1 tablespoon melted butter
1 teaspoon vanilla
2 teaspoons baking powder
2 cups quick cooking oats
1/2 teaspoon salt

Preheat oven to 375°F.

Grease and flour baking sheets.

Beat eggs until frothy. Gradually add sugar, beating until eggs are thickened and a lemony color. Stir in butter and vanilla.

On a piece of parchment paper, combine baking powder, oats and salt; add to eggs/sugar mixture and blend well.

Drop onto cookie sheet leaving 3 inches between cookies, a teaspoonful at a time (cookies will spread out).

Bake for 10-15 minutes or until golden.
