ROASTED POTATOES WITH GARLIC &
ROSEMARY
 
1 tbsp. olive oil
2 lbs. sm. red potatoes, quartered
Salt & freshly ground pepper
3 garlic cloves, slivered
2 tsp. rosemary, crumbled

Preparation time: 10 minutes. Baking time: 30 minutes. Preheat oven to 450 degrees. Coat jelly roll pan with oil. Add potatoes and remaining ingredients; toss to coat. Bake 30 minutes or until potatoes are tender, stirring once halfway through. Makes 4 servings.
